Sweet Tooth

With summer right around the corner, we are all trying to watch our waistlines here at "a beautiful life." Sometimes I get a horrible sweet tooth and I just need some chocolate. I have found the perfect muffin to satisfy my cravings yet I am not completely blowing my diet.

Chocolate Chip Coconut Banana Muffins.
1c flour
3/4 c wheat flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2/3 c sugar
1/3 c butter, melted
2 eggs
2 tbsp milk
1 tsp vanilla
1c mashed bananas
2/3 c coconut
1/2c chocolate chips
Combine sugar, melted butter,eggs, milk, vanilla, and mashed bananas together. Add dry ingredients of salt, baking soda, baking powder, and flours. Slowly mix in coconut and chocolate chips

Fill sprayed muffin tins about 2/3 of the way with batter. Bake at 350 degrees for 15-17 minutes.Enjoy!
This is perfect for a late night craving or breakfast on the go.

  7. I love bananas and chocolate together. Throw in some coconut...perfect! I'm am going to make some tomorrow with GF flour! I'll let you know how they turn out.
