Potato Soup for the Soul

Yesterday was so cold, the one way I knew for sure to warm up was to make potato soup. This soup is so easy and so yummy!

Stuffed Spud Soup
2 lbs frozen hash browns, shredded style, thawed
1/2 c. butter
1/2 c. chopped green onions
1 (10 oz) can cream of chicken soup
salt and pepper to taste
3-4 c half and half or milk
1 c. shredded cheddar cheese
chopped chives and crumbled bacon for garnish

In a stock pot over med. heat, saute onions in the butter. Add the soup, milk, and potatoes. Stir in cheese and heat gently.

This will warm you from head to toe.

  1. Oh-Em-Gee. This looks incredible and quite possibly could be on my stove for lunch today. And I love that I don't have to chop 200 potatoes!

  2. Oh my goodness, that sounds so great! Bacon, potatoes, and cheese?? What could be better??

    Have a great Wednesday!

  3. This sounds delish! I'm going to make it for dinner! Yum yum!

  4. So funny,I have been looking for a potato soup recipe! My hsuband claims he had a bad experience with it growing up (ie his mom is a bad cook). I told him to trust me I can make a good soup! This looks delish!

  5. I left you something on my blog!!!

  6. Sounds so good! My sister in law makes a Wisconsin cheese potato soup with beer in it. No joke. I need to get that recipe and send it to you!

  7. I know what I'm having for dinner tonight.

  8. Yum! I wish I could make this at school!

  9. Nothing sounds better to me right now than this!
