made my favorite apple pie....
and topped it with my favorite ice cream....
Caramel Apple Pie
2 ready made pie crusts (I mean, who has that kind of time to make them from scratch)
8 apples, cored and sliced (I like gala or red delicious)
1/4 c sugar
2 T flour
1 t cinnamon
1/4 t salt
2 T butter, melted
1/3 c dark corn syrup
1/4 c brown sugar
2 T flour
2 T butter, melted
1/4 c dark corn syrup
1/4 c chopped walnuts
Arrange apples in a pastry lined 9 inch pie plate. Combine sugar, 2T flour, cinnamon, salt 2 T butter and 1/3 c corn syrup; pour over apples. adjust top crust on top of apples, cutting slits for steam to escape. Bake in a preheated over at 425 degrees for 40 minutes, or until crust os browned. Cover rim of crust with foil if it browns too rapidly. Remove from oven. Combine brown sugar, 2 T flour, 2 T butter and 1/4 c corn syrup. Spread over pie and sprinkle with nuts. Return to the oven for another 5 minutes.

ReplyDeleteI was too lazy to make a pie this year so I bought one instead. I did make apple crisp, though. I think I need to go out and buy some of that ice cream. I just finished my pumpkin pie blizzard. So good!
