Stuffed Spud Soup
2 lbs frozen hash browns, shredded style, thawed
1/2 c. butter
1/2 c. chopped green onions
1 (10 oz) can cream of chicken soup
salt and pepper to taste
3-4 c half and half or milk
1 c. shredded cheddar cheese
chopped chives and crumbled bacon for garnish
In a stock pot over med. heat, saute onions in the butter. Add the soup, milk, and potatoes. Stir in cheese and heat gently.
This will warm you from head to toe.

Oh-Em-Gee. This looks incredible and quite possibly could be on my stove for lunch today. And I love that I don't have to chop 200 potatoes!

ReplyDeleteSo funny,I have been looking for a potato soup recipe! My hsuband claims he had a bad experience with it growing up (ie his mom is a bad cook). I told him to trust me I can make a good soup! This looks delish!
